Using a traditional (pét-nat) bottle fermentation, we’ve created a collection of single-variety sparkling ciders that showcase some of America’s most beloved cider apples. Complex and well-structured, these old-world, rustic, naturally sparkling ciders are our tribute to the skilled cidermakers of 19th century Newark who built that city’s reputation as “the great champagne manufactory of America.”

 

Golden Russet

The balance of acid, sugars, and tannins, along with gorgeous aromas of white wine, pears, and citrus flowers make the Golden Russet an ideal apple for single-variety cider. A rustic (pet-nat) bottle fermentation creates a complex, well-structured, naturally sparkling cider with notes of tropical fruit and a pithy finish.

Wickson Crab

With bright acidity, extraordinary sweetness, and deep complexity, the Wickson apple is one of the few that can stand on its own as a single-variety sparkling cider. A rustic traditional (pet-nat) bottle fermentation creates a well-structured, naturally sparkling cider with hints of fresh air, sea salt, and minerals.

 

Hard Ciders

Hard Seltzers

Our hard seltzers and ready-made cocktails reflect Ironbound’s philosophy of infusing our products with the real flavor of farmed and foraged ingredients—not those “natural” flavors concocted in a lab. Made with only six ingredients, our hard seltzers are a delicious, real-fruit alternative to flavored hard seltzers made from cheap malt or sugarcane alcohol. And our wines and ciders give our cocktails complexity and fullness of flavor that is missing in mass-produced canned cocktails.

Ironbound Imperial Ciders are our Jersey take on old-world aperitifs and digestifs. We fortify our ciders with a hit of applejack and then infuse that blend with a proprietary mix of aromatic and bittering botanicals frown on our farm and by our network of local grower-partners. CAMPALEC

An infusion of Ironbound Farm-grown herbs, fruits, and bittering roots produces notes of mixed berry compote, hot chocolate, and whipped cream with a lovely, lingering bitter finish. Our master cidermaker, Cam, and our farmer-chef, Alec, combined their creative skills—and their names (Cam+Alec)—to create this deeply flavorful aperitif. Wonderful on its own and when used in place of Campari in a Negroni, Spritz, or other cocktail.

CHERRY BURDOCK

New Ark Cider Royal

In Ironbound's revival of this early American tavern staple, we fortify naturally fermented, pure Harrison cider with a shot of applejack. The blend is then barrel aged for a year in toasted oak—melding the flavors while adding complexity and depth. The result is a creamy, mouth-filling elixir with aromas of fresh-crushed apples and just-sawn oak, and the flavor of crisp new apples balanced by brilliant acidity, refined tannic structure, and a long, sublime finish. Perfect to serve now, New Ark Cider Royal can also be aged for 10 to 15 years, allowing it to soften and deepen over time.

Our modern version of Newark Cider is made from a blend of three 18th century Newark apples: Canfield, Graniwinkle, and the legendary Harrison—a tiny, bold, surprisingly complex apple that was the pride of Newark’s 19th century cider industry. This aromatic dry cider carries notes of pear and peach—giving way to a long, clean finish with just a hint of vanilla. The flavor profile of Newark Cider varies slightly from year to year, reflecting the historic cidermaking traditions of minimal handling, native fermentation, and annual variations in apple harvests.
